Rising before the sun, Stewart Borowsky, the 'Union Square Grassman', grows bean sprouts & microgreens inside shipping containers in Sunset Park, Brooklyn. He then travels across the East River to the Union Square Greenmarket, where he has been a vendor since 1994.
